Home-Made Almond Cake
Hi everyone!
This past weekend was so much more relaxed than my crazy weekend last week!
Friday started out with breakfast with my brother and grandpa. We went to one of our favorite breakfast places, The Original Pancake House. I wasn't feeling pancakes this day, so I got a ham and cheddar omelet which was still delicious.
When my parents got home that night, we made a fire and had a simple dinner of chicken, cheesy rice, and broccoli. It was such a nice and relaxing evening!
On Saturday, my brother and dad drove to the University of Missouri to watch the basketball game (a birthday gift for my brother), so my mom and I had a girls' day! We started by doing something not so fun, though: taking down the Christmas decorations. It's all down now except for our two trees, and let me tell you, our house looks so plain and sad now!
We then went to the mall to do some shopping. We could spend hours in the mall, but surprisingly only went to three or four stores. We really contained ourselves!
We then went out to another favorite spot for a late lunch: Three Kings Pub! I got the buffalo chicken sandwich (buffalo chicken is my absolute favorite!) and my mom got Gyro sliders. Full from our lunch, we went to do some grocery shopping for the week, and then headed home to enjoy our evening.
My brother and dad came home about 20 minutes after we did, disappointed about the Tigers losing. They still had a great day, though!
Sunday was definitely my favorite day of the weekend, by far! The day started out with my mom and I going to mass and then coming home and immediately changing into our comfy clothes! We made a buffalo chicken pizza for lunch to share (it truly is an obsession, I swear), and started our dinner for the night. We made chicken and biscuits in the crockpot, so we got that set up to start cooking.
For Christmas this year, my mom got a Kitchen Aid mixer, and today was the day we were going to try it out! We decided to make an almond cake with almond butter cream frosting (my absolute favorite flavor of cake!).
But first, we had to make use of the pomegranate martini kit that my mom got for Christmas from her boss!
Yum! We then got to work on the cake batter. Neither of us had ever made a cake from scratch before, we always use a Betty Crocker boxed cake, so we were a bit nervous. As we went along, though, we realized it wasn't as hard as we thought it was going to be!
The batter tasted delicious, according to our trusty batter tester, my brother!
We then scooped the batter into two nine inch round pans and put them in the oven to bake for 25 minutes.
When they were done, they came out perfectly.
We then got to work on the next part of the project: the home made almond butter cream frosting!
After tasting this, my mom and I swore that we were never buying canned frosting again!
Just look at how delicious that looks! And it tastes even better!
After the cakes were completely cooled, we frosted the cake for a beautiful finished product:
How gorgeous is that? We were so proud of ourselves! As for the taste of the final product?
Delicious! We were so proud of ourselves for making such a delicious cake on our first try! Even my brother, who is not a huge fan of almond cake, loved it and went back for a second piece! I would say that that is a success!
